I LOVE…the South Carolina Aquarium’s Sea Turtle Rescue Program

Today I was lucky enough to attend a release by the South Carolina Aquarium’s Sea Turtle Rescue program. They released 3 sea turtles today at Beachwalker Park on Kiawah Island. What I’ve been up to…

Wow, I have really neglected the blog the past few months. I have been working a crazy amount of hours, but I am finally getting settled in to Charleston! While I have not had time to keep up with the blog, I have still been taking pictures. Here’s a look at what I have been up to:

I LOVE…My New City

About a month ago I relocated to Charleston SC and I must say that I am slowly falling in love with this city. I have been extremely busy getting settled in and working crazy hours, but I have had time to take pictures:

Both of the above photos were taken at sunrise over the Charleston Harbor. While I am slowly falling in love with Charleston, I have fallen head over heels in love with Sullivan’s Island!

Project 365 {Days 4-6}

So the past few days have been all about the flowers that are blooming around my house! Even though we have had one snow already this winter and another one in the forecast, my plants don’t seem to care that it is the middle of winter!

Project 365 {Days 1-3}

Ok, so I tried starting this in the fall of last year, but then my computer crashed and life got a little crazy. So I started this project again on January 1 and will take one picture a day for the next year! Here are my first 3 days:

DAY 1: New Years Resolution time! One of mine is to be healthier in 2011!

Pumpkin Bread Pudding

While in the grocery store a week ago, I had an epiphany while looking at the canned pumpkin display. I decided that Pumpkin Bread Pudding would be amazing! I bought a can of organic pumpkin & started browsing for a good recipe. I came across this recipe:

1 cup packed brown sugar
1 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
3 cups milk
1 teaspoon vanilla
1 can (15 ounces) pumpkin (not pumpkin pie mix)
3 eggs
6 cups bread cubes
1/2 cup currants
1/2 cup chopped pecans
16 pecan halves

  1. Heat oven to 350ºF. Grease bottom and side of springform pan, 10×3 inches.
  2. Mix all ingredients except bread cubes, currants and pecans in large bowl until well blended. Stir in bread cubes, currants and chopped pecans. Let mixture stand 10 minutes; spoon into springform pan. Arrange pecan halves on top of pudding.
  3. Bake 50 to 60 minutes or until knife inserted in center comes out clean. Let stand 10 minutes; remove side of pan. Serve warm with cream. Refrigerate any remaining pudding.
  4. I did not use the currants, but this recipe still turned out great!
